Replacing dock icons

my mother (a mac newbie) confused 2 "address book" icons in macos 10.5.4 dock (the "applications" folder in dock blue folder covered brown "address book" icon), thought i'd replace "applications" folder icon else.

tough luck! turns out isn't easy doing "show info" "applications" folder in finder, pasting new icon in place. nope!
first of all, icon doesn't show in dock @ (not when click on in dock, case macos 10.4), trew away (poof!) applications folder in dock, dragged applications folder finder window (which has new icon on it) on dock.
bingo!!! new icon. everything's perfect, life's , thought myself.

spoke soon, because second later dock folder icon changes original icon
aaaaaaargh!!!!

change "documents" , "downloads" folder icons on dock, , "applications" folder icon in dock can't changed either (although have no problem changing them in finder).
frustrating!!!!! solution this?

right click on stack. choose display >> folder.
