Advice to narrow down building external hard drive parts


hey,

take lot of photos need space/back up.

these parts i'm thinking about, need further advice people have more experience these.

can me narrow down parts should external hard drive? advice help.

hard drive:
1tb
- seagate barracuda 7200.11 st31000340as 1tb 7200 rpm sata 3.0gb/s hard drive - oem - $189 (32 mb cache)
- western digital caviar gp wd10eacs 1tb 5400 7200 rpm sata 3.0gb/s hard drive - oem - $179 (16 mb cache)
- samsung spinpoint f1 hd103uj 1tb 7200 rpm sata 3.0gb/s hard drive - oem - $179 (32 mb cache)

750gb
- seagate barracuda 7200.11 st3750330as 750gb 7200 rpm sata 3.0gb/s hard drive - oem - $129 (32 mb cache)
- samsung spinpoint f1 hd753lj 750gb 7200 rpm sata 3.0gb/s hard drive - oem - $119 (32 mb cache)

enclosures:
- owc mercury elite-al "quad interface" - $109
- there's 1 that's same, houses 2 sata drives $119 here. question is, should pay $10 space when second hard drive? point confused here wouldn't want use raid 0 - want able use them both separate hard drives.
- ministack v3 - $109
(i'm considering these enclosures because flexibility of being able use usb, firewire 400/800, esata)

last questions
- difference between 7200 rpm vs 5400 7200 rpm (like 1tb western digital 1 above)
- should 750 gb instead of 1tb? i've been reading around , know hard drives naturally fail, seems 1tb aren't stable 750 gb's?
- enclosures mentioned work internal hard drives listed above? (just need make sure it'll work before buy it).
- heat issue of these?

need help with itunes 7.7
