Restore Command for Original iPhone - HELP


now have g3 iphone, selling original - , have buyer. however, need stuff off of original , use "restore" command. however, buy not want new 2.0 software on iphone. restore command seems insisting update newest version of software. when click "cancel" , choices of restore or update, when click restore, again insists on updating. can me restore iphone, , stuff off of without having 2.0 installed on it??? thanks!!!!
