deleting downloaded apps


i'm sure there basic , easy i'm missing here, use help.

if download app directly phone, sync, , later decide delet app iphone, next time sync gets "reinstalled" iphone itunes...is there way stop this?
 

if i'm not mistaken, while iphone appears in itunes, should able select option sync manually. think means manually music, video, , apps.

need help with itunes 7.7
